Berry compote and granola
Serves: 4
For the granola: 80g rolled oats
40g sunflower seeds 40g pumpkin seeds 40galmonds
40g raisins
20g shredded coconut 1 tsp cinnamon
40ml honey, plus extra for drizzling
For the compote: Knob of butter
2 tsp caster sugar
250g frozen mixed berries 200g Greek yoghurt
150g fresh mixed berries, for serving
•Preheat the oven to 160°C fan/170°C/gas mark 3.
•Place the oats, seeds, nuts, raisins, coconut and cinnamon in a bowl and mix to combine. Add the honey and stir in.
•Spread the mixture on a baking tray lined with baking paper. Bake for 15 minutes. Then gently stir and bake for a further 5 minutes. The granola should be golden brown.
•Set aside and allow to cool on the tray.
Melt the butter in a pan over a medium heat, add the caster sugar and cook for 1-2 minutes,stirring continuously until the sugar dissolves.
· Add the frozen fruit and cook for 3-4 minutes, stirring occasionally until the berries have softened, are warmed through and the juices released.
· Remove from the heat and allow to cool.
· Divide the granolabetween four bowls.
(Any extra will keep in an airtight jar for a week.)
· Add a tablespoon of Greek yoghurt to each bowl and top with the fruit compote, fresh berries and a drizzle of honey.
