Strawberry parfait with pistachio praline

This is my best treat when strawberries are in season (as well as I even ice up the purée so I can appreciate it when they’re out of season). Orange blossom water includes that elusive exotic flavour, but don’t overdo it– a little goes a long way. A little container will certainly keep in the kitchen for years and it’s not costly to get.
750g (1 pound 10 oz) strawberries, hulled as well as
3/4 cup sugar
1 1/2 tbsp lemon juice
2 tsp orange bloom water (optional) 3 cups cream, chilled
1/2 mug crumbed Pistachio Praline (see recipe listed below) or crumbed sweet biscuits, to serve
1Heat berries in a medium pot with sugar, lemon juice and also orange blossom water (if using), stirring to
