Spaghetti bolognese is a favourite in the BOSH!
household. We like to cook it at least once a week, so we had to make a speedy edition. From blitzing and browning quality plant-based sausages and utilizing spring onions we may make our bolognese sauce in the exact same time the pasta takes to cook.
It’s ingenious — and a wonderful way to satisfy the household.
Nutritional yeast flakes add
A lightly cheesy/nutty flavour to dishes. Use with other components as a flavouring or as a completing sprinkle before serving. Start Looking for BOSH! Nooch! Nutritional Yeast from ocado.com, or try larger supermarkets and health food stores.
• 1 celery stick, roughly sliced
• 1 small carrot, roughly chopped
• 4 plant-based sausages, defrosted if necessary (we enjoy Birds Eye Green Cuisine Succulent Meat-free Sausages)
• Handful fresh thyme and/or sage
• 1 tablespoon tomato purée
• 1 teaspoon fennel seeds
• 2 tbsp olive oil
• 2 tbsp balsamic vinegar
• 1 tsp soy sauce
• 1 tsp nutritional yeast (see Know-how)
16400g tin chopped tomatoes
1 tbsp ketchup
•1 bay leaf
•1 cinnamon stick
FOR THE SPAGHETTI
•2 tbsp fine sea salt
•Plant-based parmesan-style cheese to serve
•Extra-virgin olive oil to function
YOU’LL ALSO NEED…
1 Add the celery and carrot to the food processor with all the sausages and pulse until finely chopped. Add the thyme and/or sage leaves, tomato purée, garlic and fennel seeds and pulse a couple more times. 2 Heat the olive oil in a large skillet, then tip at the mince mixture and simmer for a couple of minutes. Add the balsamic vinegar, soy sauce, nutritional elements, chopped tomatoes, ketchup, bay leaf and cinnamon stick. Squeeze in the juice from the orange, stir and leave to simmer while you cook the pasta.
3 Cook the spaghetti in salted water
Until al dente (still with some bite), according to the packet instructions. 4 Remove the cinnamon and bay leaf in the sauce and discard. Use tongs to slosh the cooked pasta into the sauce in the pan, bringing some of the pasta water onto it. Mix with the tongs, adding more pasta water if it looks dry.
